Day by day

Day 1: land in Paris, evening walk from the Louvre courtyards along the Seine to the Eiffel Tower at lights-on. Sleep in Paris.
Day 2: Louvre in the morning (timed ticket), Montmartre at golden hour.
Day 3: Versailles half-day or the Marais and Île de la Cité, last Paris night.
Day 4: morning Eurostar to Amsterdam, canal ring on foot, evening in the Jordaan. Sleep in Amsterdam.
Day 5: Rijksmuseum or Van Gogh Museum (book ahead, they sell out), Vondelpark, canal-side evening. Second Amsterdam night.
Day 6: fly home from Amsterdam, or Eurostar back if your return leg is from Paris.

Booking tip: an open-jaw ticket (into Paris, out of Amsterdam) avoids repeating the train leg; price both against a simple Paris return before you buy.

Apply through France as your main destination. France routes all UAE applications through VFS Global in Abu Dhabi per the official France-Visas page, and its online fee of €30.33 is paid at booking. Eurostar (the former Thalys route) runs direct in about 3 hours 20 minutes. Advance fares start at EUR 35 one way; once the cheapest tier sells out you will see EUR 55 to 135, so book as soon as your visa dates firm up.
